Everything on/in this pizza is made from scratch so the fantastic thing is that you know what is in it. The mozzarella cheese is also dairy free, melts like real cheese and is stretchy and soft like real cheese.
This is a fantastic go to recipe for a Friday night game or even that Sunday arvo when you want something tasty and a nice crunchy base. Goes great with beer!!

Ingredients
Base
- 3 tbsp Ground Chia Seeds mix with half a cup of water when you start the recipe
- 1 Cup Chickpea Flower
- 1 tsp Oregano
- 1/2 tsp Dried Basil
- 1/2 tsp Ground Garlic
- 1/4 tsp Chilli Powder (optional)
- 1/2 tsp Kosher Salt (use Himalayan, Celtic what ever you want just make sure it is well ground)
- 600-800 Grams Potatoes Boiled and Mashed
Cheese
- 1/4 Cup Raw Cashews (Soaked over night)
- 1 Cup Hot Water
- 27 Grams Tapioca Starch (Flour) (2 Tbsps+2 tsps)
- 1 tbsp Nutritional Yeast
- 1 tsp lemon juice
- 1/2 tsp Kosher Salt (Same as the pizza base salt!)
- 1/4 tsp Garlic Powder
Toppings
- 10 Cherry Tomatoes
- 1/4 Egg Plant sliced into strips or chunks but don't make it too big
- 1 Handful Fresh Basil
- 1/2 Handful Fresh Parsley
- 1 Handful Fresh rocket
- 1/2 Apple Sliced
- 1/2 Capsicum Sliced
- 1 Soup Spon Tomato Paste

Instructions
Base
- Pre heat oven to 200 degrees celsius
- Combine Chia seeds and water mix well so they don't get too clumpy
- Boil potatoes till they are soft and then mash
- Combine all of the base ingredients and mix well
- Get a couple of trays that you are going to cook these babies on and tear off two pieces of baking paper for each tray that you are going to use. I usually get two decent sized pizzas out of this mix. At least that is what my wife tells me.
- Now you job is to turn the mess in the bowl into a flat base. This stuff is sticky so just place a blob onto the paper and then cover with the second piece of paper. Then get a wine bottle that has it's lid firmly attached and start rolling this bad boy out.
- Once you get it pretty flat and thin, I usually aim for about 5 to 7mm place in the oven with the paper still on top and the bottom.
- Leave in the oven for about 15 minutes then carefully take the paper off the top. And cook for a further 10 minutes or until it is fairly brown. (PS it is during this time that you make your cheese and get your toppings sorted if you didn't do it when the potatoes were boiling.
Cheese
- Make sure that you Cashews are soft either you soaked them or you boiled them.
- Add all the ingredients together in a high powered blender! Then blend until nice and smooth!
- Then pour into a sauce pan! Here is a tip if you like your wife/partner then use a teflon coated sauce pan if not got for a stainless steel pan this stuff is sticky!!!
- Have it on medium high heat, do not walk away stay with it and stir it with a spatular I use one of those silicon ones you would be amazed at what you can do with it and nothing sticks!!!!
- Now stir it until the mixture comes together it will start clumping first and then will turn into an amazing gooey blob! Once it has all come together take it off the heat and set it aside. I usually find that this mixture will do two pizza's!
Adding the toppings and finishing it off
- Add the eggplant and all the green herbs into a bowl add some olive oil and mix them up just so the egg plant get a bit of moisture in it!
- While the above is soaking in spread the tomato paste on the pizza base.
- Now add the egg plant and herbs
- Then everything else leaving the cheese till last.
- Red hot tip only place the cheese where you know you won't cut! This stuff is sticky and if you try and cut through it with a knife it will stick to it like s*#t to a blanket!
- Then put it in the oven until the cheese has browned up usually only 10mins!
Recipe Notes
As fair as the pizza toppings go I usually add olives, tomatoes and mushrooms but don't get too carried away keep the toppings manageable you don't want to have to use a knife and fork cause then it's not pizza!!!!
